Easy Strawberry Lemon Cupcake Recipe

While we were making our strawberry pudding lemon cupcakes we also made these super easy strawberry lemon cupcakes. In just five minutes you can add a special touch to basic cupcakes and dress them up for a party or potluck gathering.

We started by making mini lemon cupcakes. As soon as we pulled them out of the oven we used the rounded end of a kitchen utensil to make small dents in each cupcake. (You can use your thumb too, but it gets hot after a bit.)

Then the girls added a strawberry marshmallow to the center of each cupcake. We found the new Kraft Jet-Puffed Strawberry Snacking Marshmallows (Amazon link) to be the perfect size for these cupcakes.

We tossed the cupcakes back in the oven until the marshmallows were just melted. Then we added sliced strawberry to the center of each marshmallow. Mmmm! The squishy marshmallow texture, the fresh strawberry, and the yummy lemon cupcake make a delicious combination. Take some along to your next party or mix up a batch for dessert at home.
