I love Rice Krispies treats and so do my kids. They are a quick and easy treat to make for parties and school events. And with a little creativity you can fancy them up a bit and add new flavor like we did here. By adding blueberries and cherries you get a pop of flavor that’s sweet and tart and that the same tame. They’re delicious! Plus your adding in healthy antioxidants!
Ingredients
- 3 Tbsp Butter
- 10 oz package mini marshmallows
- 5.5 cups Rice Krispies
- 1/4 cup white chocolate chips
- 1/2 cup dried blueberries
- 1/2 cup dried cherries
Start by mixing the Rice Krispies, white chocolate chips, dried blueberries and dried cherries in a bowl. This is a great step for little ones to help with. They can practice measuring and mixing.
Spray 9 x 11 baking pan with cooking spray.
In a large pan melt butter on the stove using low to medium-low heat. Spray spatula or spoon with cooking spray to help prevent sticking. As soon as butter melts mix in the marshmallows and stir continuously until the marshmallows are melted.
Remove the pan from heat. Quickly stir in the remaining dry ingredients from the bowl. Mix them until well combined. Then pour into baking pan and flatten.
Let cool completely. Then cut into squares or use festive cutters to make them into shapes. These would make a terrific red white and blue dessert for patriotic holidays like Memorial Day, 4th of July and Labor Day.
If you’re making them to keep at home and you don’t want your family to gobble them up in one day, then you can freeze some. We like to freeze half the batch and save it for a week or so. When freezing place wax paper in between layers of Rice Krispies treats and seal in an airtight container. The treats should be good for about six weeks. When ready to eat, simply remove from the freezer and let them sit out at room temperature for about 20-30 minutes. Then enjoy!
