Strawberry Pudding Lemon Cupcake Recipe

We’ve been on a bit of a strawberry and lemon kick since we made our strawberry lemonade popsicles. The combination of flavors is just perfect for summer. This simple cupcake recipe is an easy way to dress up plain cupcakes for a summer dessert. Take them to a party or enjoy them at home!

Easy Strawberry Pudding Lemon Cupcakes

We started by using a lemon cake mix to make mini cupcakes. If you have a favorite recipe from scratch, use it!

While the cupcakes were baking Tinker helped me get the topping ready. We mixed a box of Strawberry Creme pudding with 1.5 cups of milk. Then put it in the fridge to cool. We also worked together to slice some strawberries.

As soon as the cupcakes came out of the oven I made dents in the center of each muffin using the end of our whisk. You can use a thumb or find a utensil that will make a rounded dent.

We scooped the pudding into a zip-top bag, and I cut a small hole in the end. Lovey and I squeezed some strawberry pudding into the middle of each cupcake. This was her favorite part of the process…especially eating the left over pudding!

Adding pudding to cupcakes At this point the muffins were pretty enough to eat, but we topped them off with strawberry slices to add a little fresh fruit.

Chill the cupcakes until they are ready to be served. Then enjoy! The mini muffins are just the right size for summer gatherings. We enjoyed ours at a play date with some of our buddies.
