Ginger Almond Cookies
Almond Cookies are China’s preferred Christmas cookie, and baking them with your kids is a great way to encourage togetherness through baking and kindness through sharing with others.

- 1 cup shortening
- ½ cup sugar plus (4 tbsp) more for rolling
- ¼ cup packed brown sugar
- 1 large egg
- 1 tsp almond extract
- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1/3 cup candied ginger finely chopped
- Sliced almonds
Preheat oven to 350 F.
Using stand mixer bowl or hand mixer and large bowl, cream shortening, ½ cup sugar and brown sugar together until light and fluffy.
Add the egg and almond extract. Mix together well.
In a medium bowl, whisk together the flour, baking soda and salt and gradually add to the sugar mixture.
Stir in the ginger.
Using a teaspoon shape into small 1-inch balls. Roll them in the remaining sugar.
Place 2 inches apart on ungreased baking sheets or baking sheet lined with parchment. Flatten the cookies with the bottom of a glass or measuring cup dipped in sugar. Press a sliced almond into the center of each cookie.
Bake 9-11 minutes or until edges are light brown. Cool on the sheets for a couple of minutes. Move to wire racks to cool completely. Store in an airtight container.
